Your sales and day-to-day activities will illustrate what needs improvement. They also highlight what has worked and what has not.</p><p>Many restaurants are often operated on instinct. However, without certain restaurant metrics, a business is unaware of where profits are being earned.</p><h2>These are important key restaurant metrics:</h2><ul><li>Total sales and revenue</li><li>Food cost percentage</li><li>Average check</li><li>Table turnover</li><li>Labor percentage</li></ul><p>Each of these metrics provides you with a different insight into your business. If you're enjoying good sales, this doesn't mean your profit will be good if your food cost is high as well.</p><p>The metrics also allow you to remain in control of your business. Metrics help with day-to-day tracking of performance. They allow you to identify trends at an early stage. Low table turnover suggests that staffing needs to be improved. Low <a href="https://plumpos.com/glossary/average-check.html">average check</a> sizes can mean that up-selling needs to be targeted.</p>
